I found this recipe to make Xôi in an instapot.
Recipe for 200g of rice
- Put a metal basket/trivet to rise the bottom of the pot.
- Fill the bottom of the instant pot with 1 cup (250ml) of cold water
- Add a stainless stell bowl in the pot.
- Put 1 cup / 2—g of glutinous rice in the bowl
- cover the rice with cold water (about 2/3 cups or 167ml), make sure to cover the rice
- Cook at high pressure for 12 minutes (per cup of rice), with the valve closed
- let it release after for about 7 minutes, it will fluff it.
Serve the rice with a drop of sauce nuocman, or maggy. The best is with Lapsuong sausages….
