Bò Bía – Rolls

Another type of Vietnamese fresh rolls.

Ingredients

  • rice paper
  • lap xuong (Chinese sausage)
  • eggs for omelet
  • jicama (Mexicain turnip)
  • dry shrimps
  • herbs : mint, salad,  rau răm (Vietnamese coriander) or Rau quế (Vietnamese basil)
  • Sauce : sriracha + hoisin
  • Optional : fried shallots, dried peanuts

Preparation:

Cut the jicama in sticks, cook them in a pan. Make a thin omelet, cook it and then roll and slice in strips. Cook the lap xuong sausages in little water, then slice them diagonally and sauté a little. Rehydrate the shrimps, then mash them and sauté them to be crispy.

Assemble : wet the rice paper, put herbs, some lap xuong, omelet, shrimps, (peanuts/shallots), jicama, then roll. Serve with the sauce.
