Another type of Vietnamese fresh rolls.
Ingredients
- rice paper
- lap xuong (Chinese sausage)
- eggs for omelet
- jicama (Mexicain turnip)
- dry shrimps
- herbs : mint, salad, rau răm (Vietnamese coriander) or Rau quế (Vietnamese basil)
- Sauce : sriracha + hoisin
- Optional : fried shallots, dried peanuts
Preparation:
Cut the jicama in sticks, cook them in a pan. Make a thin omelet, cook it and then roll and slice in strips. Cook the lap xuong sausages in little water, then slice them diagonally and sauté a little. Rehydrate the shrimps, then mash them and sauté them to be crispy.
Assemble : wet the rice paper, put herbs, some lap xuong, omelet, shrimps, (peanuts/shallots), jicama, then roll. Serve with the sauce.
